The meals you create are born from an innate passion for food. What inspires you?
The diversity of the ingredients. whether it be their colour, texture, smell or taste, available during each season is a great inspiration for me. Each dish you create, becomes what it is due to the ingredients working together.
I am also inspired by the experiences I have in my life. The more you are introduced to new people, new food styles, new methods, the more you want to experiment with and expand your own style.
What piqued your interest in ORCA initially? How does ORCA complement your kitchen?At the CN Tower we are continually looking for innovative ways to improve our efficiencies in all areas of our business. It is our responsibility to be aware of and lessen our impact on the environment. Finding greener solutions is the right thing to do. The ORCA has allowed us to better manage the disposal of our kitchen waste, reduce our transportation costs and provide a cleaner kitchen environment.
The reporting provided by the ORCA lets us track fluctuations in the amount of food waste being generated. This allows us the opportunity to adjust ingredients that may be creating an excess of waste and continue to use those that produce less waste.
